Yuba Cuisine is one of the specialties of Nikko.
Yuba is a thin layer of skin created on the surface of soy milk when it is boiled down. Yuba is also popular in Kyoto; however, the yuba in Nikko is slightly different from Kyoto's in the way it is made and its appearance.
Kyoto's yuba is pulled up from the edges with skewers giving it a flat shape; while Nikko's yuba has several layers with a voluminous texture, as it is folded in two in the middle and pulled up with a skewer, then rolled up.
